Instructions

Step 1: Prepare the Outer Dough

1. Boil water with a pinch of salt.
2. Stir in rice flour to create a dough.
3. Knead the dough until smooth and set it aside, covered

Step 2: Make the Sweet Filling

1. In a pan, combine freshly grated coconut and grated jaggery.
2. Cook until the jaggery melts and the mixture thickens.
3. Add cardamom powder and a pinch of salt, mix, and allow it to cool

Step 3: Shape the Modak

1. Take a small portion of the dough and roll it into a smooth ball.
2. Flatten it into a thin, round disc, with edges thinner than the center.
3. Place a spoonful of the coconut-jaggery filling in the center of the disc.
4. Carefully bring the edges together to form a Modak shape, creating pleats if desired.

Step 4: Steam the Modak

1. Grease a steamer plate or bamboo steamer with ghee to prevent sticking.
2. Arrange the Modaks on the plate with some space between them.
3. Steam the Modaks for 12-15 minutes until they become translucent and shiny.
